  Great for Game Day

 

Spinach Artichoke Dip

Makes 8

 

2 – 8 oz. packages Cream Cheese

2 – 14 oz. cans Artichokes Hearts, drained, coarsely chopped (well drained)

1 cup Spinach frozen chopped or fresh steamed (well drained)

½ cup Mayonnaise (DO NOT USE MIRCLE WHIP)

½ cup Parmesan Cheese grated

½ cup Romano Cheese grated

2 cloves garlic, finely minced

1 teaspoon dried Basil or 2 Tablespoon Fresh Basil

¼ teaspoon crushed red pepper flakes

Salt and pepper to taste

½ - ¾ cups Mozzarella Cheese grated

 

Preheat oven 350°

 

Allow cream cheese to come to room temperature.  Cream together mayo, Parmesan, Romano Cheese, garlic, basil and crushed red pepper flakes.  Add the artichoke hearts and spinach (careful to drain this well), and mix until blended add a pinch of salt and pepper.

 

Spray 8x8 baking dish with cooking spray, pour in the dip, and top with the Mozzarella cheese (use can sprinkle a little extra Parmesan as well if you like) 

 

Bake for 25 minutes or until the top is browned serve with toasted bread.
